I recently accepted avocados into my life. For some reason I never really liked them, or maybe I just never really tried them.
But a few months ago I bought one at the grocery store (I’m an impulse shopper), and after a day or two of staring at it, I decided I would do the grown-up thing and give it a true shot.
I’d see dozens of Pinterest pins and blog posts about “avocado toast”. Since I’m always looking for different healthy breakfasts to try… and I had this darn avocado sitting on my counter mocking me… I rummaged through my fridge and found (what I hoped would be) the makings to a tasty avocado toast recipe.
Ingredients:
– One ripe avocado
– A slice of toast (I used Trader Joe’s whole wheat fiber bread)
– Balsamic vinegar
– Lemon juice or lemon dressing (I used a lemon Simply Dressed vinaigrette)
– Pepper to taste
Toast the piece of bread up and slice the avocado. Pile those slices high! The more the better, in my opinion. Make it a leaning tower of avocado!
Drizzle the lemon dressing/juice and balsamic over the mound of tastiness and sprinkle some pepper over it!
BAM! A tasty, delicious, and healthy breakfast to keep you full all morning long :) Take a bite!
Needless to say. I’m now obsessed with avocados and always look for recipes to put them in. Any suggestions?
