SIMPLE RECIPE | Easy chicken pesto bake

I kid you not, during this meal I actually patted myself on the back because of how darn good this chicken was! It was one of the easiest recipes in the world, only required four ingredients, and took 3 minutes of prep time.

The result was a moist, flavorful feast! No joke, I’m making this again this week.

Ingredients:
– Chicken breasts (one per person)
– Basil pesto (2 tablespoons per breast, depending on how pesto-y you like it)
– Sliced tomato
– Cheese (I used a Mexican blend, but mozzarella would be even better!)
– Herbs and pepper (to taste)

Preheat your oven to 400 degrees and spray the bottom of your dish with olive oil.

Place chicken breast in pan and cover each with pesto.

Cut up your tomato into even slices and line them up on top of the chicken.

Cover it all in cheese. BAM! Done :) Told you it was simple.

Pop those tasty creations into the oven for 30-40 minutes, depending on their size, and enjoy a glass of wine while you wait.

Then, sprinkle with some herbs if you wish and dive right in! My mouth is watering just thinking about it again.

If you’re not completely satisfied with this dish then you have done something wrong, because it’s the bomb! Seriously.

    Hi – I saw this recipe when you mentioned it at Modern Mrs. Darcy’s blog a couple of months back, and I saved the link. Our family loves chicken, pesto, and cheese, so it sounded like it would be a hit — and when I tried it for the 1st time last week, it was! We’re definitely adding this one to our family repertoire.
