You know those nights when you get home late from work and all you’re craving is something warm and cheesy? I hate to say this happens more than I’d like to admit.
It’s hard to eat healthy all the time, but if you make small alterations to recipes when you want to indulge in, it’s not quite as bad for you.
This simple “healthy” pizza recipe calls for only a few core ingredients and then just throw on random things that you have in your fridge as toppings! It’s that simple.
– Tortilla (a kind made with no hydrogenated oils, those are some dangerous things for your body!)
– tomato sauce (I used a tasty garlic and basil kind from Trader Joes)
– cheese (any kind you have)
Toppings (aka anything else you have in your fridge that would be good on a pizza):
– garlic powder
You can cook the pizza in the oven or on the stove. I like the stove better since that was how my mama makes them at home.
Put a bit of olive oil (or coconut oil) in the bottom of the pan, add a tortilla, and then pile it high with sauce, cheese, and toppings.
With just the tortilla serving as the “bread”, it’s much better for you than a deep dish with pepperoni and sausage.
Once your pizza is decked out with all the trimmings, put a cover over the pan and turn the pizza on low/medium heat. As the cheese starts to melt and you see the sauce bubbling, you know it’s ready to kick it into high gear. Pop up the heat a bit more and remove the lid for a minute. This will make the bottom nice and crispy.
Watch the bottom of the tortilla so it doesn’t burn, and voila! A “healthy” pizza awaits :)
