This recipe calls for only three ingredients and yields a heck of a lot of tasty sweet potato fries!
Ingredients:
– Sweet potatoes (2 medium potatoes will serve about 3 people)
– Coconut oil (or olive oil)
– Herbs and spices (I use rosemary, salt, and pepper)
Scrub your spuds super well. Those things have been growing in the dirt so put some elbow grease into it!
Once they are sparkling clean, cut them up into even slices. Make sure you cut them as evenly as possible or else (as you can see in some of the pics) they will burn on the thinner areas. I dice mine to be about an 1/8 of an inch.
Now throw the sliced potatoes into a ziplock bag, add a few tablespoons of coconut oil (or olive oil), about 3 tablespoons of rosemary (or whatever herbs you are using), a teaspoon of salt, and a teaspoon of pepper. Seal up the bag and mix it all around to coat the slices evenly.
Then lay them all out on a cooking sheet. The boyfriend loves spices, so he always sprinkle just a bit more on top after I take them out of the bag, for good measure.
Now all you do is bake them at 425 for about 30 minutes. When they look to be cooked to your liking, take ’em out, pop ’em on a plate, and enjoy!
As you can see, we paired them with grilled chicken, but it’s a great compliment to any meal. Or even as a tasty snack :)
