I tend to get the random urge to bake. Sometimes it’s when I’m hungry, sometimes when I’m bored, but more often than not it’s when I’m stressed and need to do something to relax.
Being served up in the kitchen today is a super simple recipe for banana bread!
Just like my mom, I always make banana bread when I have leftover bananas that are one day too ripe for eating. All of the other ingredients are always in your pantry and fridge, so it’s a simple creation that requires no trip to the store!
Ingredients:
– 2 ripe/ mashed bananas
– 1 beaten egg
– 1 ½ cup flour
– ¾ cup sugar
– ⅓ cup melted butter
– 2 teaspoons vanilla
– 1 teaspoon baking soda
– pinch of salt
Mix together all of the ingredients, spread out evenly in greased loaf pans, and pop them in the oven for about 45 minutes at 350 degrees!
Keep an eye on them as they start to get brown on top. If the center still needs a few more minute of cooking, but the top is getting too brown, lay a piece of tin foil over the bread to keep it from burning. Use a cake tester in the center of the loaf to check it’s fully cooked before taking it out of the oven.
