Crock pot buffalo chicken

Two days ago was a snow day (this Florida girl is still getting used to this concept)! With the snow came a strong desire to cook… since I was stuck indoors all day alone and bored out of my mind. Problem though, with inches of snow on the ground, I couldn’t make it to the grocery store.

After ten minutes of staring blankly into my fridge and cabinets, the perfect concoction came together! I found a way to turn three ingredients into a simple, edible crock pot dish. It filled my apartment with a warm, delicious smell that made me (just for a moment) forget about the arctic tundra outdoors.

Ingredients:
– 3-4 boneless chicken breasts
– 1/2 bottle (or so) of a 12oz bottle of wing sauce (I had some leftover wing sauce from a delicious buffalo chicken dip recipe that I will share soon!)
– A few tablespoons of a chip and dip mix (I used a delicious chip and dip mix by Penzeys Spices, but this can easily be substituted for your own garlic/ onion powder mix or a packet of dry ranch dressing dip)

That’s it! Put all the ingredients into your crock pot and turn that baby on high for about 4 hours. After about 3.5 hours, take a fork and pull apart all the chicken so it can absorb the extra juices in the pot. At this point, I even added a bit more wing sauce to the chicken to make sure it was nice and spicy :) Turn the crock pot on low for the last 30 minutes.

You can put your pulled buffalo chicken on a salad, burger bun, tortilla, or just eat it straight. Top it with some sour cream and cheese and you have a feast! It’s a new staple in my apartment since the roommate and the boyfriend both gave it a thumbs up.
