I love my mother and her delicious cooking. I have learned so much from her growing up, but there is one thing I never really knew… how to make the perfect hard boiled egg.

I love my eggs sunny side up, fried, or poached. Any way so that the yolk is warm and runny. I know how healthy hard boiled eggs are for you, but the hard dry center just never did it for me! Until one day I forgot how long I had been boiling the eggs for and took them out much sooner than usual. BAM! That is how I discovered how to make the perfect hard boiled egg.

hard boiled eggStep 1: Fill a pan with water, enough so that when eggs are placed in the water it will cover the whole egg, and bring to a boil.

Step 2: Carefully place your eggs into the pan (I lower mine in with a spoon to make sure they don’t crack when they hit the bottom).

Step 3: Turn down the heat a little bit so that the water isn’t boiling too hard, causing the eggs to hit together and potentially crack.

Step 4: Boil the eggs for exactly 7.5 minutes (only about 7 minutes if they are smaller, white eggs).

Step 5: Immediately remove from heat after cooking. Spoon out eggs and place into a large bowl with water and ice to cool the egg and stop any additional cooking.

Step 6: Let them cool in the ice water for about 2 minutes. Then peel, sprinkle with some salt and pepper, and enjoy a perfectly cooked hard boiled egg with a warm, runny center :)
