I’ve only recently discovered coconut rice. I was out to dinner with the boyfriend when the waiter offered up white or coconut rice with his order. I chimed in and proclaimed he would LOVE the coconut rice (aka I wanted to try it).

And… it was delicious! It was so moist, slightly sweet, and completely new to me. Since then, every restaurant I go to serving rice, I ask if they have it. Sadly, the answer is usually no.

Yesterday my Real Simple daily recipe email popped into my inbox with the title “coconut rice salad”! I looked up the ingredients it was calling for and made a few alterations (aka just found the rice ingredients). I ran to Trader Joe’s to pick up what I needed, which was only one thing – unsweetened coconut milk.

Then I headed home to begin cooking!

Ingredients (makes two servings of rice):

– 1 cup unsweetened coconut milk
– 1/2 cup dry rice
– 1/2 tablespoon sugar
– 1/4 teaspoon salt

Pour all ingredients into a sauce pan, bring to a boil, then cook covered on a low simmer until all liquid is cooked off (about 30 minutes)! Ta da! Your tastebuds will thank you :)

I paired the first rice serving with some fresh salmon, and plan to pair the other serving with shrimp!

Even if you aren’t a coconut fan, I still suggest trying coconut rice! It’s more of a sweet flavor, there is just a slight hint of coconut, promise.

    I’ve never tried coconut rice but I love coconut and rice separately so I’m imagining it would be a major win! Love that it’s super easy to make.
