The boyfriend always comes to me with new meal requests, this time it was for cauliflower rice (aka “cauli rice”).
I don’t know much about the paleo diet but I do know I could never follow it (I love bread, milk, and wine WAY too much!) That doesn’t mean paleo dishes aren’t delicious though, like this dish!
I’m all about simple recipes, which you probably know by now, and I try to be a healthy eater. I have my slip-ups though, like today when I ate a whole Hershey’s bar… but I digress.
Cauliflower rice is super simple to make, requiring only two fresh ingredients (cauliflower and onion). Although it doesn’t exactly taste like rice, it does taste better than just florets of the vegetable!
Note: This is a great side but it can’t replace rice in dishes where it was meant to soak up liquid (a baked casserole, for example). Since the cauliflower is already so moist, it doesn’t act like rice when cooked with other things.
I suggest you pair cauli rice with pesto chicken, salmon, and black bean burgers!
Ingredients (yields 4 servings):
– A head of cauliflower
– 1/4 cup diced onion
– Two tablespoons of coconut oil
– Salt and pepper (to taste)
– Dab of butter (if you wish)
Step 1: Wash the cauliflower and cut off the tops.
Step 2: Take a coarse cheese grater and grate up the florets into a bowl.
Step 3: Dice onions and place in skillet with coconut oil, sautéing for 3 minutes.
Step 4: Add grated cauliflower and sauté for another 4 minutes.
Step 5: Add salt, pepper and butter to taste and enjoy the “rice”!
BAM! A tasty, healthy, SIMPLE side dish that is also paleo friendly :)
The boyfriend is now obsessed with it since it’s a lower calorie, healthier version of rice (plus it tastes delicious!). It’s now a staple side dish at my house!

Brilliant idea! I’ve used cauliflower for a pizza base, but never tried it as a rice substitute. Must give this a go :)

I also could never stick to the Paleo diet…haha. I just LOVE dairy and carbs (and wine). I also have been considering the Whole30 challenge for about a year now…but I know I could never do it because I could basically eat nothing but leaves! lol

Hahaha we think exactly the same! I’ve been contemplating the Whole30 challenge as well (all of my friends have been doing it)…. but I know my weaknesses (bread and wine) and just could NOT do it!
