Once a month is book club night, one of the best weeknights of the month! It’s the perfect excuse to try a new recipe, sip wine with friends on a Tuesday night, and chat about books (and then gossip a bit afterwards).
Last week was book club. I’d already selected my wine and next month’s book recommendation. Now all I had to do was pick a recipe!
As I recently mentioned, I’m spiralizer obsessed! I’ve been googling all of the different things I can spiralize, which is how I came up with this tasty, super simple, raw veggie salad for my book club dish.This salad takes about 5 minutes to make, requires only a few ingredients, and is super healthy!
Ingredients:
– Zuchinni (spiralized, aka raw zoodles)
– Carrots (spiralized)
– Cucumber (diced)
– Cherry tomatoes (cut in half)
– Lemon juice (a few tablespoons)
– Olive oil (a tablespoon)
– Salt and pepper (to taste)
Mix together all the ingredients and serve chilled :) It’s a great dish to bring to a party (aka book club) where you know there will be delicious but unhealthy options such as baked brie, sausage pasta, brownies, and glasses of red wine.
It’s a good thing this salad was delicious to make up for the not-so-great book club read this month. Seriously, don’t waste your time reading it.

I have thought about getting a spiralizer… looks like a kitchen gadget you would use time and time again. The salad looks delicious :)

It’s no joke that I’m obsessed with it hahah the list of things you can spiralize doesn’t end :) I strongly recommend one! And you can get one for only $10!

Where did you get your spiralizer by the way? I’ve been hearing so many good things about it! I have a mandolin, but it is kind of dangerous and I’m always afraid of cutting myself by accident..
