I admit it, I have a problem. A snacking problem. Especially when the snacks are crunchy.
Give me a bag of pretzels, pita chips, popcorn, or cereal (literally anything) and it’ll be gone in a matter of minutes. This is sadly not a joke.
Because of this little “problem”, I try not to keep them in the house.
But sometimes you just NEED a little snack. This Sunday, after all of the fireworks, beer and bonfires, all I wanted to do was put my feet up with a good book and a tasty (but healthy) snack.
These crispy curry chickpeas came to the rescue! The recipe only requires 4 ingredients and yields a tasty treat.
Ingredients:
– 1/2 can of chickpeas (I saved the other half to make these again later in the week)
– 1.5 tablespoons of olive oil
– Sprinkle of salt (to taste)
– 1.5 tablespoons curry powder (to taste)
Step 1: Drain your chickpeas and wash well.
Step 2: Lay the chickpeas on paper towels to dry for a few minutes.
Step 3: Remove any of the skin/shells that have fallen off. The rest can stay on.
Step 4: Stir chickpeas, olive oil, and salt in a bowl and make sure all peas have a nice coating.
Step 5: Spread them out in one layer on a cooking sheet and pop in the oven at 400 degrees for 20-30 minutes.
Step 6: While cooking, make sure to take a spatula and move them around on the tray every 7-10 minutes to cook/brown evenly.
Step 7: Once they have a nice brown, crispy outside, remove from the oven and sprinkle with curry powder.
Step 8: Enjoy them while they’re hot!
These are a perfect snack alone or a great addition to a salad. Step 8 is crucial though, once they being to cool they don’t taste as crispy. So don’t dilly daddle!
The chickpeas don’t have to be curry-flavored either! You can add any seasoning you want; rosemary, cinnamon, cumin, the list goes on and on.
