Jalapeños! The word I will never be able to spell without relying on spell check and the vegetable I cut then immediately rub my face (whyyy??)…. jalapeños are a struggle for me.
My mom didn’t cook with jalapeños very frequently in our house growing up, so whenever I see a recipe that calls for them I get a bit nervous… But when my recent soup recipe called for diced jalapeños I had to suck it up and buy a container.
Once the soup was made and devoured (with only one jalapeños used) the boyfriend saw seven whole jalapeños sitting sad and alone in my fridge… so he made his demands… Jalapeño Poppers!
Wrapped in bacon, of course :)
I’ve never made (or eaten) jalapeño poppers before, so little did I know how simple (and DELICIOUS) these little things are!
– Jalapeños, sliced in half (remove all insides)
– 1/2 cup cream cheese
– Sprinkle of garlic powder (to taste)
– Sprinkle of paprika (to taste)
– Bacon :) bacon, bacon, baconnnnn
Step 1: Mix the cream cheese, garlic powder, and paprika together in a bowl.
Step 2: Slice jalapeños in half and remove all insides. (Don’t rub your eye during this process, you’ve been warned!)
Step 3: Fill each jalapeño half with the cream cheese mixture.
Step 4: Wrap the filled jalapeño with bacon and hold together with a toothpick.
Step 5: Pop (pun intended) them in the oven on a greased cooking sheet at 400 degrees for 30-35 minutes until the bacon is nice and crispy! While they are cooking you will smell delicious scents wafting from your oven and your moth will begin to water. Resist the urge to jump in before it’s done cooking!
Step 6: Eat them as fast as you can!!! (Especially if you are fighting over them with your boyfriend who seems to think he gets to eat 80% of them since they were his idea… HA!)
I will now go out of my way to find recipes that require jalapeños so I can make these delicious poppers with the leftovers again :)
And next time I will try to wait just a fewwwww minutes longer before pulling them out to make the bacon even more crispy!
