This is the third crockpot I’ve blogged about and I’ve learned something… there is no way to take a flattering photo of a crockpot recipe.
No matter how delicious the recipe is (and this one is quite tasty), a picture of a pile of saucy shredded chicken just can’t look pretty, especially when the sauce is brown and chunky…. Anyways, back to the point, this delicious crockpot recipe!
I love making crockpots on the weekend because:
1) It makes my apartment smell delicious all day long
2) I have lunches and dinners made up for the week!
The boyfriend requested a thai crockpot this time, so TA DA! The boy gets what he wants! (Plus it’s our one year anniversary tomorrow, so I was being extra nice)
Ingredients:
– 2 lbs. chicken breast
– 1/2 cup chicken broth
– Half yellow pepper (diced)
– Half red pepper (diced)
– Small yellow onion (diced)
– 1/2 cup all natural peanut butter
– 1/4 cup soy sauce
– 2 tbs. honey
– 1.5 tbs. lime juice
– 2 tbs. hot sauce
– 1 tsp. red pepper flakes
– Chopped nuts for the top after cooking
Step 1: Place the diced peppers and onions in the bottom of the crockpot.
Step 2: Place the raw chicken on top.
Step 3: Stir together all other ingredients and pour overtop of the chicken.
Step 4: Turn that puppy on high for 4 hours..
Step 5: When you have about 20 minutes left, shred the chicken and give it a good stir.
Step 6: Fill up a bowl with your crockpot goodness and grab some lime slices and squeeze their juicy goodness all over that thing!
(The boyfriend wanted to help with the blog pictures and thought a double lime squeeze was necessary to include… so shout out to him and his lime squeezing skills!)
I now have four meals all set for the week :) This crockpot is delicious paired with brown rice, rice noodles, or even by itself!
