I’m on a boat, I’m on a boat! Just kidding :) My meat is on a boat… a zucchini boat to be exact! And it’s the tastiest boat around.
If you love meat, zucchini, and cheese then this recipe is for you! Stop whatever you are doing, go to the store, get the following ingredients, and make these tasty things! You can thank me once you are done licking your fingers in satisfaction.
You see that cheese dripping down the side?? Yeah, I was drooling too. Let’s get right down to it, shall we?
Ingredients (makes 4 boats, 2 per person):
– 3/4 pound ground beef
– 2 zucchinis
– 1/2 diced onion
– 1/2 diced red or orange pepper
– 1 diced jalapeño (you know how I feel about these things)
– 1/2 cup corn (I used Trader Joe’s fire roasted corn for an extra kick)
– 1/4 cup diced mushrooms
– 1 cup cheese
– 3 tablespoons ketchup
– Salt and pepper to taste
I know that seems like a long list of ingredients but most of them are standard items, so don’t fret!
Step 1: Sauté ground beef, onions, peppers, jalapeños, and mushrooms in a pan over medium heat until the beef is cooked through.
Step 2: Drain beef and stir in corn, ketchup, salt, pepper, and 3/4 cup cheese.
Step 3: Dig out your “boat” (aka slice each zucchini in half, cut off the two end, and scoop out the center guts with a small spoon). Make sure to keep the hull of your boat about a 1/3 inch!
Step 4: Load that boat up! Don’t worry about the boat’s capacity. I had some boats that were overflowing with meat :) YUM YUM
Step 5: Top each boat with a delicious layer of cheese (the more cheese the better, if you ask me) and pop those babies in the oven at 350 degrees for 25 minutes.
Step 6: DIVE IN!
I kid you not, I even impressed myself with these things :) I went for the traditional fork and knife route to eat them… the boyfriend ate his like a taco. All the while exclaiming, with a mouth full of meat and an arm dripping in sauce, “This is the best thing everrrr!”.
So run, don’t walk to the grocery store, and get ready for a feast! This is a new staple recipe at my house now :)

The key is making sure to drain the meat before putting it into the boat! No one likes a soggy boat haha And make sure to dry the zucchini before using!

Hi Amanda, This has to be THE MOST delicious gut-friendly, gluten/corn-free idea for a taco-like dish that I have ever seen. I can’t wait to put these together. My kids are going to love it. Two questions: (1) what kind of cheese did you use or do you have a favorite cheese for this recipe, and (2) what kind of mushrooms did you use for this recipe or do you have a favorite kind of mushroom you most love for this recipe?
