ZUCCHINI NOODLES | How to make zoodles

I’ve officially had zoodles every day for the last 4 days in a row. I’m zoodle obsessed!

If you don’t know what a zoodle is, I’m here to help. A zoodle is made from zucchini. You “spiralize” the zucchini into long thin strips (like noodles), and BAM you have yourself a “zoodle”!

You can mix them into anything under the sun or pile them high on a plate and pair them with a large glass of wine :)

The boyfriend always comes to me with new meal requests, this time it was for cauliflower rice (aka “cauli rice”).

I don’t know much about the paleo diet but I do know I could never follow it (I love bread, milk, and wine WAY too much!) That doesn’t mean paleo dishes aren’t delicious though, like this dish!

I’m all about simple recipes, which you probably know by now, and I try to be a healthy eater. I have my slip-ups though, like today when I ate a whole Hershey’s bar… but I digress.

WEEKNIGHT MEAL | Simple shrimp pasta recipe

I’ve expressed my hatred before for cooking long, extensive meals during the week that yield 6 portions when I only have my little mouth to feed… it’s not only wasteful of ingredients, it’s wasteful of time too!

I’ve ALSO mentioned my love of frozen shrimp :) They are my go-to healthy dinner ingredient for when I haven’t been to the store in a while (or when I’m craving a bit of seafood… and I haven’t been to the store in a while).

Thursday after work was one of those days where all of the above was happening, so I created a simple shrimp pasta dish. The best part about it is that you only need two fresh ingredients (onion and tomato)!

I’ve seen quinoa crusted chicken all over Pinterest! I keep pinning it and pinning it because they look delicious, but I’ve never actually made it… until now!

I went to the store and bought the ingredients! That’s step one to creating these healthy chicken tenders :)

The problem… I only looked at the ingredients, not the actual steps of how to make it :(

Wash quinoa, cook quinoa, dry quinoa, bake quinoa, grind quinoa up into a flour….. waaahhh??? Ain’t nobody got time for that!

I’ve seen this all over Pinterest and always wondered what it would taste like… Ever since avocados became a super trendy food to eat (and I finally accepted them into my life), people have been trying to put them with all kinds of things. Smoothies, baked goods, and now eggs!

I’m usually an “egg-in-the-hole” gal (egg and toast), but I finally gave in the other day and made an egg-in-an-avocado! They need to come up with a cooler name for it, but this recipe is super simple and delicious! Not to mention healthy :)
