I tend to get the random urge to bake. Sometimes it’s when I’m hungry, sometimes when I’m bored, but more often than not it’s when I’m stressed and need to do something to relax.

The other night the boyfriend was on a work call that was taking wayyy too long for my liking. As I fiddled around in the kitchen, cleaning up from dinner and giving him the evil-eye to wrap up the call, I got an urge to cook something.
It’s easy to get caught in a trend of eating out for dinner, especially when you have so many restaurants within walking distance of your apartment. Though, lately I’d been craving a delicious home cooked meal.
So I did what any 20-something girl living on her own would do, I called my mommy for guidance. She gave me a simple recipe and I was off to the grocery store in search of turkey burger ingredients!
I whipped some of these easy to make, no bake, peanut butter energy balls before the boyfriend and I went on a couples trip last weekend. With a 3 hour car ride and a weekend full of activities, I knew we would need something for nourishment and easy snacking.
I can’t take credit for creating the recipe (I found it on Pinterest, like most recipes these days), but I made a few tweaks and alterations to make them even better. There are no “exact” measurements for this recipe… you just have to pour, stir, and taste!
