I’ve seen this all over Pinterest and always wondered what it would taste like… Ever since avocados became a super trendy food to eat (and I finally accepted them into my life), people have been trying to put them with all kinds of things. Smoothies, baked goods, and now eggs!
I’m usually an “egg-in-the-hole” gal (egg and toast), but I finally gave in the other day and made an egg-in-an-avocado! They need to come up with a cooler name for it, but this recipe is super simple and delicious! Not to mention healthy :)
I woke up this morning craving oatmeal. With the slightly chillier weather we’ve had for the last few days, I was hoping a hearty oatmeal dish would warm me up!
Instead of just a regular bowl of oats, I decided to whip up baked mixed berry oatmeal muffins! Not only are they delicious and healthy, but they are perfect to save for a few days and easy to devour on the go. And, the maple syrup sweetens the muffins up just enough to make them taste like a dessert :) It’s a win, win, win!
So, today was a snow day…. and I didn’t go to the grocery store. It was an issue.
I woke up freezing and starving (horrible combo), and all I wanted to do was head down the street to my local LPQ for an avocado tomato omelette <3, but the inches of snow on the ground were preventing that in a huge way! So, I stuck my head in the fridge and started to rummage around.

I’ve recently become a bit obsessed with cottage cheese. Not only is it great for you, but I have now turned it into a tasty breakfast treat as well!
